Penne Pasta with Red Bell Pepper Pesto

Recipe: Penne Pasta with Red Bell Pepper Pesto

Summary: This Italian-style meal is a hearty family dish, perfect for a busy weeknight.

Ingredients

  • 1 pound Penne Pasta, cooked, drained and hot
  • 6 tbsp. pine nuts
  • 6 tbsp. grated parmesan cheese
  • 1 cup Wild Veggie Red Bell Pepper
  • 6 tbsp. olive oil
  • Salt and pepper, to taste
  • Italian parsley and grated parmesan cheese for garnish

Instructions

Sauce Preparation:

  1. Grind pine nuts in a food processor until it almost resembles a paste.
  2. Add parmesan cheese and blend.
  3. While machine is running, stream in Wild Veggie Red Bell Pepper.
  4. Again, with machine running, stream in olive oil until emulsified.
  5. Season with salt and pepper, if desired.

Assembly:

  1. Place hot pasta in a large mixing bowl and add parsley leaves and sauce.
  2. Toss together until pasta is covered.
  3. Portion pasta into serving bowls, and garnish with remaining parmesan cheese.
