Carrot Mousse

Recipe: Carrot Mousse

Summary: This decadent dessert is the perfect ending to a special meal, whether it’s a holiday or date night.

Ingredients

  • 1 c. Wild Veggie Carrot
  • 2 eggs
  • ½ c. sugar
  • 1 tsp. ginger, ground
  • ¼ tsp. nutmeg
  • ¼ tsp. salt
  • 2 tsp. cornstarch
  • 1 c. heavy cream, whipped

Instructions

  1. Heat Wild Veggie Carrot in a saucepan until warm.
  2. In a separate bowl, mix together the eggs, sugar, spices and cornstarch.
  3. Slowly add the heated Wild Veggie Carrot to egg mixture and whip.
  4. Return the mixture to the pan and bring to a boil.
  5. Place in a mixing bowl and onto an ice bath to cool.
  6. Fold in whipped cream.
