Recipe: Braised Chicken with Spicy Red Bell Pepper & Ginger Sauce

Summary: This hearty meal is great on weeknights when you don’t have a lot of time to cook, but still want a substantial meal. It’s also a healthier alternative to Chinese takeout!

Ingredients

  • 4 tbsp. vegetable oil
  • 2 and 1/2 lb. chicken, cut into 8 pieces
  • Salt and pepper, to taste
  • 2 tbsp. garlic, chopped
  • 2 tbsp. ginger, chopped
  • 1 small fresh hot chili pepper, chopped
  • 3 cups Wild Veggie Red Bell Pepper
  • ¼ cup Chinese parsley, chopped

Instructions

  1. Heat the oil in a large skillet, season chicken with salt and pepper and brown on both sides.
  2. Remove the chicken from the pan, and set aside.
  3. Drain the excess oil from the pan.
  4. Sauté garlic, ginger, and chili, and add Wild Veggie Red Bell Pepper.
  5. Simmer for 10 minutes, and then add chicken; cover and braise in 350° oven for 20 minutes.
  6. Plate, top with parsley and serve.
